Trying to follow the Weight Watchers plan can be tough for me because of my big, fat sweet tooth! I especially have a hard time limiting ice cream or finding a suitable replacement. I grew up eating ice cream... whether popsicles from the popsicle truck or a bowl of Mayfield goodness with my Mother's homemade chocolate syrup! Anyway... this week I tried a new product that I really like! The product is Halo Top. It comes in pint sizes and in a variety of flavors. I've tried Peanut Butter cup... good. But the Salted Caramel one is to die for. I've been using the points for the Chocolate flavor so haven't run the numbers but 1 1/2 cup serving is only 2 points. Even if you ate the whole pint (and what ice cream lover hasn't at one time or another) it would only be 8 points! I'm in love... they have other flavors such as Mint Chocolate and Birthday Cake. I found mine at the Food City in East Brainerd but bet you could find some too locally! You may need to let it sit out a few minutes because it can be rock hard but it's so worth the wait! Try it and let me know how you like it!

Mmmm Muffins: Double Apple Bran Cereal Muffins - 4 SmartPoints Each
SmartPoints : 4 points per muffin as I made them

Categories :
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups bran flakes
1 cup skim milk (I used 1% milk)
1 whole egg
1 small apple -- peeled and chopped
1/2 cup unsweetened applesauce
1/3 cup packed brown sugar (I used 8 tsps of splenda brown sugar blend)
2 tablespoons butter -- melted (I used 2 Tablespoons of SmartBalance Olive Oil spread)
You can also throw in more fruit... like, I threw in about 1/3 cup of leftover blueberries.
Mix flour, baking powder, cinnamon and salt in a large bowl.
Mix cereal and milk in another bowl; let sit 3 minutes.
Beat egg in medium bowl. Add apple, applesauce, sugar, and margarine; mix well.
Add cereal mixture; mix well.
Add to flour mixture; stir until moistened (batter will be lumpy).
Spoon batter evenly into 12 medium muffin pans cups sprayed with nonstick cooking spray, filling each cup 2/3rds full.
Bake at 400 degrees for 20 minutes or until golden brown.
Serve warm.

I'm back with a new Recipe for Valentine's Day ❤
Snickers Pie 8 servings... approximately 7 pts. Per serving
1 pint frozen vanilla yogurt, softened
2 Tbsp. Peanut butter
1/2 package of dry jello chocolate instant pudding mix
1 cup of cool whip lite
1 tsp Hershey's syrup
Combine all in large bowl. Mix well and pour into 8" pie tin. Freeze until set. Before serving, drizzle 1 tsp Chocolate-Syrup over entire pie in swirling motion.
