8 Chicken Small to Medium Chicken Breasts
4 slices of Sliced Cheese (cut in 1/2)
1 can Healthy Cream of Celery Soup
1 can Healthy Cream of Chicken Soup
1 small can of mushroom stems and pieces
1 Cup WATER
1 Box Dry Stove Top Stuffing Mix -- Savory Herbs
2 Tbsp Butter
Lay chicken in casserole dish. Layer 1/2 slice of cheese over each chicken breast.
Mix soups, mushrooms and water. Pour over chicken/cheese layer.
Mix butter with dry stuffing mix. Sprinkle over casserole. Give it a spray of pam if needed to keep from burning.
Bake uncovered at 350 for an hour.

Rotel Chicken Dinner
I make this a WHOLE lot... really helps in a pinch and so easy to make
Rotel Chicken:
WW Smart Points: Count number of oz of chicken. Veggies are free.
Ingredients:
My favorite way to serve is with rice with the tomato/mushroom mixture spooned over it.

Ingredients:
- Split Chicken Breasts with ribs (although boneless can be used)
- 1 can Rotel Tomatoes
- 1 can mushrooms
- Take selected number of chicken breasts (I prefer on the bone)
- Season as you wish
- Put in casserole dish
- Open 1 can of Rotel Tomatoes and 1 can of mushrooms (optional) for every 2 chicken breasts (if you like alot of "soup")
- Bake 1 hour or until chicken is done in a 350 degree oven.
