This was absolutely delicious! I cut down on the cheese and only put some on the top. Next time, I will cut the meat in half and add portabellos chopped and cooked to be "meaty"... for those that don't mind ground turkey or ground chicken... I think that would be a good lower fat solution than ground chuck or leave it out completely. I like the meat in it. As recorded but with only a 1/2 c of cheese only on the top... it's 9 smart points.

Just in Time for Thanksgiving... Smoky Spiced-Pecan Roasted Sweet Potatoes

I'm back! I'm all about good tasting snacks. I've recently been into the different varieties of Laughing Cow cheeses (1 pt per wedge) and mini Baby Bels (2 pts each). But need something crunchy to go with it. Here are some of my favs! One of my coworkers turned me on to Pretzel Crisps. You can usually have 10 of them for 3 points... they come in lots of flavors. I have found that Buffalo is a little too intensely "Buffalo" for my tastes. The original is go along with these two. They also have new mini Salted Caramel Twists for something sweet and salty. You can have 30 of them (30!!) for 4 points. I just had 15 of them this am for a nice little sweet snack with coffee. Enjoy and have a good week! I'm going back to tracking religiously... are you? ;-)

Greetings and a Fall Recipe - Crustless Impossible Pumpkin Pie
Greetings! I had to come home early from the Outer Banks due to Hurricane Matthew. But it's fall... glorious fall. I'm sharing with you one of my favorite fall make over recipes... just in time for the holidays. Here's my adaptation of a Crustless Impossible Pumpkin Pie. It's 6 points with Splenda for baking... If you use regular splenda, it's 3 points per slice. Enjo* Exported from MasterCook *
Impossible Pumpkin Pie reduced
Serving Size : 8 Preparation Time :0:00
3/4 cup splenda or 1/2 cup splenda for baking
3 egg whites -- beaten
15 ounces pumpkin puree -- (15 ounce = 1 can)
12 ounces evaporated milk -- (12 fluid ounce = 1 can)
1 teaspoons vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground allspice
(or a tablespoon of pumpkin pie spice and a little more cinnamon)
Preheat oven to 350 degrees F (175 degrees C). Spray one 9 inch pie pan, and set aside.
Mix all the ingredients well and pour into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes, or until a toothpick inserted in center comes out clean.
