Undone Stuffed Pepper Casserole

This was absolutely delicious!  I cut down on the cheese and only put some on the top.  Next time, I will cut the meat in half and add portabellos chopped and cooked to be "meaty"... for those that don't mind ground turkey or ground chicken... I think that would be a good lower fat solution than ground chuck or leave it out completely.  I like the meat in it.  As recorded but with only a 1/2 c of cheese only on the top... it's 9 smart points.

Hi all:

  I'm back!  I'm all about good tasting snacks.  I've recently been into the different varieties of Laughing Cow cheeses (1 pt per wedge) and mini Baby Bels (2 pts each).  But need something crunchy to go with it.  Here are some of my favs!  One of my coworkers turned me on to Pretzel Crisps.  You can usually have 10 of them for 3 points... they come in lots of flavors.  I have found that Buffalo is a little too intensely "Buffalo" for my tastes.  The original is go along with these two.  They also have new mini Salted Caramel Twists for something sweet and salty.  You can have 30 of them (30!!) for 4 points.  I just had 15 of them this am for a nice little sweet snack with coffee.  Enjoy and have a good week!  I'm going back to tracking religiously... are you? ;-)

Greetings and a Fall Recipe - Crustless Impossible Pumpkin Pie

Greetings!  I had to come home early from the Outer Banks due to Hurricane Matthew.  But it's fall... glorious fall.  I'm sharing with you one of my favorite fall make over recipes... just in time for the holidays.  Here's my adaptation of a Crustless Impossible Pumpkin Pie. It's 6 points with Splenda for baking...  If you use regular splenda, it's 3 points per slice.  Enjo* Exported from MasterCook *

Impossible Pumpkin Pie reduced

Serving Size : 8 Preparation Time :0:00

3/4 cup splenda or 1/2 cup splenda for baking
3 egg whites -- beaten
15 ounces pumpkin puree -- (15 ounce = 1 can)
12 ounces evaporated milk -- (12 fluid ounce = 1 can)
1 teaspoons vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground allspice
(or a tablespoon of pumpkin pie spice and a little more cinnamon)

Preheat oven to 350 degrees F (175 degrees C). Spray one 9 inch pie pan, and set aside.

Mix all the ingredients well and pour into the prepared pan.

Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes, or until a toothpick inserted in center comes out clean.

"6 points each" for splenda for baking (sugar blend) -- 3 points with 1/2 - 3/4 cups splenda

Skinny Margarita Recipe from Louise

Here's the Margarita Recipe that Louise shared with us... no points except for the Tequila.


Get Crystal Light lemonade and add a little lime juice and tequila. 

Dip rim of glass in lime juice then salt. 

Everything is zero points except the tequila. Yummy!!!

I don’t know how to share this with others…but I tried this.  It was delicious.  I added lean ground beef, which made them 9 points and they were HUGE.

For some reason, I have turned into a "salty" craver... I found the perfect cracker that not only tastes good (important to me) but gives me a bunch in a serving (important to me) for not so many points ((important to me).

I eat these on the side with my chicken salad.  They are good for general munching and would be good dipped in salsa... or hummus (if you like that sort of thing! :-)

I got these at Publix... they are 4 points per 14 cracker serving.  They will remind you of wheat thins (or they do to me).

Chicken Salad with Grapes Recipe

This chickens salad recipe makes a delicious, quick meal. Made with chicken, grapes, and roasted nuts, it is always a favorite!

Ingredients
  • 1 whole rotisserie chicken boiled chicken, cut into ½-inch cubes
  • 1 cup chopped celery (chopped finely)
  • 1 cup red grapes, halved
  • ½ cup dried cherries
  • ½ cup slivered almonds roasted pecans, chopped
  • 1/4 cup 1cup mayonnaise
  • 3/4 cup plain greek yogurt
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • celery leaves, chopped (optional)
Instructions
  1. Add chopped chicken to a large bowl along with celery, grapes, dried cherries, chopped pecans, mayonnaise, salt and pepper. If using chopped celery leaves, add these as well. Stir together until just combined.
Notes
To lighten up the recipe, you can use Greek yogurt in place of the mayonnaise!

I LOVE the Nestle Outshine Fruit Bars (the WW Tracker says it is Edy's but the points come out to the same) = 1 point.  It is so refreshing and helps with my need for "ice cream."  Enjoy!

3-2-1 Cake in a Mug

I couldn't believe it... Cake in a minute... In a mug... I *think* it's 3 points... I used sugar free cake mix so not sure... May be less... I'll figure it up and edit when I find out.

To make the mix, combine your favorite cake mix (I used SF Devil's Food) with 1 box of angel food cake mix.  Keep stored in zip lock or air tight container.

To make cake... Spray a microwave safe mug with butter flavored PAM.  Mix 3 Tbsps of cake mix blend with 2 Tbsp of water in separate bowl.  Pour in prepared mug.  Place mug in microwave on high for 1 minute.  Be amazed!

You can do any type of additions.  I just cut up a banana on top and drizzled sugar free caramel sauce on it with some Redi Whip.  It was yummy!

Favorite Fruit Smoothie

NOTE:  Works best with frozen fruit.  I usually keep small ziplock bags individually portioned with a banana, handful of blueberries, blackberries, raspberries, etc.  When ready to use, I take it out frozen and break up any of the fruit that has stuck together.

2-3 WW Smart Points

To make:

1 Baggie with my frozen fruit
1/3 - 1/2 cup Chobani 0% fat plain yogurt
1/3 - 1/2 cup unsweetened light almond milk
Splenda, to taste.

Blend until smooth.  Thin with water or almond milk.

I drink all of it due to low points and fruit.  Enjoy!

Fluffy Greek Yogurt Pancakes (as modified by me)

Serving Size : 2 ( Makes 4 - 1/2 cup sized pancakes -- 2 large pancakes for each = 8 points for the 2 pancakes)

1 cup all-purpose flour
2 teaspoons baking powder
1 Tablespoon Splenda (I would add a little more -- I like a sweet batter)
1/4 teaspoon salt
1 cup unsweetened almond milk (or any other variety of milk)
1 large eggs
1 teaspoons vanilla extract (I would add a little more)
1/4 cup plain 0% Chobani Greek yogurt
Blueberries 
Maple syrup -- for serving


In a large bowl, whisk together the all-purpose flour, baking powder, splenda and salt.

In a small bowl, whisk together the milk, egg and vanilla extract. Pour the liquid mixture into the flour mixture and stir just until combined. Add the yogurt and stir.

Heat a 12-inch nonstick skillet or griddle over medium heat and spray it well with butter flavored nonstick cooking spray. Working in batches, spoon a half cup of the batter onto the pan for each pancake and sprinkle with a few blueberries.  Cook just until bubbles form around the edges of each pancake, about 3 minutes or so. Flip and cook for 4-5 minutes to make sure it is done through.  Transfer the pancakes to a warm plate. Repeat with the remaining batter.

Serve the pancakes topped with maple syrup.

Mock Individual Lemon Meringue Pies

1 sugar free, fat free Vanilla Pudding Cup
Juice of a 1/2 a lemon
1 tsp of Splenda
4 sugar free Murray's Shortbread cookies, crushed.
Sugar free Cool Whip

Crush 4 sugar free Murray's Shortbread cookies and line in bottom of ramekin.
Mix the pudding, Splenda, and juice of 1/2 a lemon.  Spread over crumbs.
Cover and chill until cold.
Top with cool whip just before serving.

Pretty good not to be full of sweetened condensed milk! ;-)

Susan's Pita Pizza

13 Smart Points -- Very filling.

1 whole wheat pita
1/4-1/2 cup of spaghetti sauce
17 slices of turkey pepperoni
Sauteed Onions & Peppers
Mushrooms
Black & Green olives
1/3 c of Italian cheese blend

Layer all except cheese.  Bake on pizza stone or directly on the rack for 20 minutes.  Add cheese and heat 5-6 minutes.

Makes 1 serving

Weight Watchers Cobbler

Here is a variation of the traditional 3 point cobbler.... still 3 points but some changes.  This version came from a friend at the last WW's meeting.  This is how I made mine.

Preheat over to 350 or so.

Meanwhile, drain: 1 large (i.e. 29 oz) can of sliced peaches in light syrup or fruit juice, drained.  Set aside.

Pour drained peaches in an 8 X 8 dish.

Sprinkle half of 1/2 Pillsbury Sugar Free Yellow Cake mix, dry mix on top of peaches.

Pour 10 oz of diet ginger ale over all.

Bake in preheated oven for 60-70 minutes until browned some on top.

Let sit for 5-10 minutes to cool to thicken juice that is made.  Serve with cool whip on top.

Serves 6.

Double Apple Bran Cereal Muffins

NOTES : 4 Smart Points (calculated through WW Recipe Builder)

1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups bran flakes
1 cup skim milk
1 whole egg
1 small apple -- peeled and chopped
1/2 cup unsweetened applesauce
1/3 cup packed brown sugar
2 tablespoons butter -- melted

Mix flour, baking powder, cinnamon and salt in a large bowl.

Mix cereal and milk in another bowl; let sit 3 minutes.

Beat egg in medium bowl. Add apple, applesauce, sugar, and margarine; mix well.

Add cereal mixture; mix well.

Add to flour mixture; stir until moistened (batter will be lumpy).

Spoon batter evenly into 12 medium muffin pans cups sprayed with nonstick cooking spray, filling each cup 2/3rds full.

Bake at 400 degrees for 20 minutes or until golden brown.

Serve warm.
